The 32nd recipe I’ve made for this group is One-Pan Meatballs with Potatoes and Broccoli and can be found in the Whole30 Fast & Easy Cookbook on page 147. (I made the meatballs small to match the little potatoes and broccoli florets I used, so this is shown on a salad-size plate, not a full size, in case you were wondering how big of a serving this makes.)
Ingredients: potatoes, broccoli, garlic, salt, olive oil, egg, almond flour, Italian seasoning, red pepper flakes, ground beef, pancetta, onion, tomato basil pasta sauce, and lemon wedges.
It is still rainy here, even my kitchen is a bit dark and solemn as seen here in the photo, sheet pan dinners are quick and easy, so Margaret and I picked this dinner for us today. Margaret's post is here. This is a simple recipe, my kind of thing where things don’t end up touching too much on the plate. The only things I varied were that I did not put the pancetta in the meatball mix as I’m not such a fan of it, and the meatballs kept rolling around too much so I squished them a bit to make them stay still on the sheet pan…and, they are easier to eat that way, less chance of one going flying off the plate (this I learned when the boys were very young). The whole dinner is quick and easy with ingredients usually on hand here, so I would definitely make this again.
