The 36th recipe I’ve made for this group is Chicken Cacciatore and can be found in the Whole30 Slow Cooker cookbook on page 239. Here is Margaret's post.
Ingredients: chicken, oregano, salt, black pepper, coconut oil, onion red bell pepper, mushrooms, canned diced tomatoes with juice, chicken broth, tomato paste, garlic, and fresh parsley for garnish. (Note: the recipe in the book serves it with zucchini noodles, Mark is not a fan of those and wanted rice with it, so I used a bit of Food Freedom for the rice. All ingredients listed use Whole 30 approved versions.)
Cacciatore means hunter in Italian so this dish is a hunter-style chicken dish. We happen to love chicken with vegetables so when Margaret suggested this recipe, I seconded it immediately, it all seemed like a fine thing to make on a rainy day. While the recipe in the book gives directions for making it in the instant pot, I don’t happen to have one of those, so I just cooked it stovetop for a longer amount of time. This version has a nice clean taste with most of the usual flavors that we enjoy in cacciatore, definitely will use this recipe again.
