The 31st recipe I’ve made for this group is Sheet Pan Buffalo Chicken with Cauliflower and can be found in the Whole30 Fast & Easy Cookbook on page 153.
Ingredients: cauliflower, olive oil, salt, pepper, ghee, chicken breasts, compliant Buffalo sauce, and compliant ranch dressing (for serving). I did not serve with ranch dressing (not a favorite) and I added a few stalks of asparagus to round out the meal.
It is still rainy here, the grill is sitting outside patiently waiting. Sheet pan dinners are always easy, everything gets placed on the sheet pan and baked for the same amount of time without much assistance. All of this was nicely flavored (you can add as much buffalo sauce to the chicken as you like) and I would not hesitate to make this again.
