The 25th recipe I’ve made for this group is Chicken Tikka Masala and can be found in the Whole30 Slow Cooker Cookbook on page 190. Margaret's post is here.
Ingredients: chicken thighs, salt, coconut milk, turmeric, coriander, curry powder, cumin, garam masala, garlic, ginger, cayenne pepper, onion, crushed tomatoes, tomato paste, lemon juice, and chopped parsley. The recipe instructions call for cauliflower rice but I used regular rice (Food Freedom).
A cold and rainy week, so out came the crockpot for this recipe. After marinating the chicken overnight, tossing everything in, the crockpot does all the work for four hours on high so that when supper arrives, you can just dish it up, serve it over a bed of rice and enjoy. We both enjoy Indian cuisine occasionally so this is a nice salute to those flavors and gives our menu a bit of a change. We served it with a side of steamed broccoli, always a favorite here. I would make this one again, it was easy and delicious. Definitely repeat worthy.
