Ingredients: olive oil, whole grain mustard, garlic, rosemary, salt, black pepper, small red potatoes, small red onion, and pork chops.
Margaret and I both had pork chops this week and Margaret picked this recipe for us to make as we also had the other ingredients on hand. It was easy, didn’t take too long, and worked on a weeknight when Mark and I both were out for a major part of the day. We added some carrots to add a little color and round out the flavors. This all reminded me of my growing up years where a meal like this, plain and simple without any unusual ingredients was the norm. Just pork chops and potatoes, simple and delicious, it could be repeated again any time.
