The 16th recipe I’ve made for this group is Shrimp and Mango Salad and can be found in the Whole30 Fast & Easy cookbook on page 32.
Ingredients: lime zest, lime juice, olive oil, cilantro (parsley), jalapeño, salt, shrimp, chili powder, salt, lettuce, mango, and avocado.
Margaret isn’t fond of avocado and I had all the ingredients on hand for this salad, so I went ahead and made it on Friday when I needed a meatless dish. The dressing is light with a fresh taste from the lime and a little kick from the jalapeño pepper. The shrimp was well seasoned to go with the dressing. The mango and avocado worked to calm any heat from the other spices and give it a nice fresh clean taste, which we both liked a lot. I would make this recipe again, it is easy, quick, and delicious.
