Ingredients: ghee, asparagus, shrimp, grape tomatoes, eggs, salt, black pepper, and pesto.
Fridays are fish/seafood or eggs here during Lent so this recipe worked nicely as it had both seafood and eggs. We eat omelettes a few times a month as they are quick, easy, and can be either filled with a variety of ingredients or just be a simple supper with a salad. This was a very good recipe, easy to follow, quick to make, and delicious. The filling made a lot so it was spilling out, which is not a bad thing. We had never had pesto in an omelette before, so it was fun to try a new ingredient with it, and it was tasty, I will probably use that again. I would make this combination anytime, it was a hit.
