The 19th recipe I’ve made for this group is Pork Loin with Sweet Potato, Apple, and Pear Smash and can be found in the Whole30 Slow Cooker Cookbook on page 145.
Ingredients: pork loin, thyme, garlic and herb seasoning, black pepper, sweet potatoes, apples, pears, cinnamon, salt, cranberries, and cider vinegar.
For the moment, small roasts are still appreciated here every other week or so, but grilling season is coming soon, so I think this one and one more small beef roast are going to signal the end of roasting season. In general, I can take or leave pork, Mark loves pork, but I’m usually on the fence depending on how it is prepared usually. This one was moist, tender, and delicious. The veggie/fruit mash was also delicious with one notation…a little too sweet for us, so next time I would halve the amount of apple and pear so that it would be less sweet. The cinnamon was good with the mash and could be tasted slightly with the sliced pork as well. Mark was happy with it so I could make this again for him, the slow cooker did all the work.
