The 18th recipe I’ve made for this group is Lemon-Ginger Salmon and Asparagus and can be found in the Whole30 Fast & Easy Cookbook on page 129.
Ingredients: olive oil, lemon juice, coconut aminos, rice vinegar, fresh ginger, garlic, salt, pepper, asparagus, salmon fillets, lemon slices, green onions (I don’t care for raw onion and fish so I left those out).
Friday again, so fish is always on the menu, this week is Salmon with a light sauce, baked in the oven, and served with asparagus and a few purple potatoes. The sauce is fresh and easy to put together, salmon and lemon are always a good idea, and the ginger just makes it even more so. The whole recipe beginning to end, takes 20-25 minutes. Fast & Easy, delicious, and definitely worthy of a repeat.
