The 54th recipe I made for the Cook the Book Fridays group using the Everyday Dorie cookbook by Dorie Greenspan is Sweet Chili Chicken Thighs, it can be found on page 114.
Ingredients: neutral oil, onion, ginger, garlic, salt, white wine, chicken thighs, pepper, Thai sweet chili sauce, soy sauce, Dijon mustard, Sriracha, sliced scallions, and red pepper flakes. I served it over rice.
Usually I am on my own when it comes to Asian flavors, Mark not being a fan. When Matt is home, I have a fellow diner as he can always be counted on to join in with anything Asian. I knew this recipe was going to be one that I would make for myself for lunch. I prepared it all with the same ingredients, changing only the chicken thighs, which I decided to dice the meat and then cook it so that it was in bite-size pieces when served, an excellent idea. The flavors are wonderful, the preparation easy, and this is going on my “Make Again” list…often.
