The 52nd recipe I made for the Cook the Book Fridays group using the Everyday Dorie cookbook by Dorie Greenspan is Citrus-Marinated Halibut (Tilapia) with Mango Salsa, it can be found on page 180.
Ingredients: fish (she suggested halibut but since it was $24 a pound and very scarce, she said we could use whatever was best at the market…this is Indiana and the market for fresh fish is not that exciting, so I used tilapia as it was budget-friendly and we happen to like it), lemon, orange, olive oil, scallions, cilantro (I used parsley), jalapeño, salt, sugar, cayenne, grape tomatoes, mango, red bell pepper, red onion, ground pepper, and canola oil.
What a recipe find…this was easy and delicious, took hardly any time at all to assemble, cook, and serve. The citrus sauce is delicious with this delicate fish, the tomatoes and mango give it a nice pop of flavor. Mark had his with some sautéed potatoes (he thinks most all dinners should come with some sort of potato…doesn’t have to be a lot, but should be present). I thought a side salad would be fine and so it was. The only thing I would change would be to lessen the amount of raw red onion in the salsa as it overpowers everything, I might even just leave that out. I will make this again. I might even splurge for halibut at some point.
