Every season is soup season for me as I like soup or salad for lunch any time of the year. Margaret, however, lives in Louisiana and doesn’t like to heat up the stove for soup/eat hot soup in the heat of summer, so we knew we should pick soup recipes to make in the next couple of months…it gets to be summer very quickly in Louisiana. We chose the recipe Chinese Chicken and Bok Choy Soup in Whole30 Cookbook on page 122.
Ingredients: Chicken bone broth, fish sauce, mushrooms, carrot, Bok Choy, cooked chicken, salt, toasted sesame oil, and green onions.
The recipe is easy to follow, uses ingredients I almost always have on hand, and a bowl of it is very filling. It is always nice to find a soup recipe that can use bits leftover in the refrigerator, like leftover chicken as it calls for cooked chicken. I will make this recipe again, the flavors were good, even better the second day. I wish I could send some over to Margaret as she has a cold and this would be a perfect bowl of comfort for her, she will make it when she feels better, I’m sure it will taste wonderful at that point.
