The 9th recipe I’ve made for this group is Whole 30 Chicken Sausage Stuffed Bell Peppers and can be found at Kelsey’s Little Bits of Real Food blog: click this link here. Margaret's post is here.
Ingredients: oil, onion, garlic, Italian chicken sausages, mushrooms, marinara sauce, and bell peppers. (She also listed cauliflower rice but we don’t care for that so I didn’t use any.) I added some pepperoncini that I diced up to give it more of a kick.
Stuffed bell peppers are popular here, I make them several times a year, so when I had leftover chicken sausage and bell peppers from another recipe, this seemed like a good match. As you can see from the recipe, it’s all very easy, assembles quickly, and cooks in a just a little amount of time after a busy day. Leftovers warm up nicely as well. Definitely a repeat.
As usual here on this blog, I do not publish recipes that belong to others, respecting their rights as authors. Many times the recipe creators are generous and publish them online, or you can buy the book I that I have cited and have all the recipes at hand.
