Next in line for the soups Margaret and I chose to make is the recipe Chicken and Mushroom Soup in the Whole30 Fast & Easy cookbook on page 189.
Ingredients: bacon, cremini mushrooms, onion, garlic, salt, red pepper flakes, chicken bone broth, sweet potato, cooked chicken, and thyme. (I also added a bit of chopped kale at the end as I like chopped kale in soups like this.)
The recipe is easy to follow, uses ingredients I almost always have on hand, and a bowl of it is very filling. This is such a pretty soup with the addition of the diced sweet potato. The flavors are wonderful together. I would add a few more red pepper flakes than stated as they were great in there and there weren’t enough of them for me, a little more heat/spice would be nice. I think Margaret also thought it could use a bit more spicing. Definitely a repeat for me.
