One of the really nice benefits of W30 recipes is that Mark is happy to eat this way as it doesn’t use “fake” diet-type ingredients. Whole30 is just plain simple healthy cooking with fresh ingredients, I try to pick recipes that are familiar and popular with his tastes (sorry Brussels sprouts). The 7th recipe I’ve made for this group is Balsamic Beef Roast and Root Vegetables and can be found in the Whole30 Fast & Easy cookbook, page 251.
Ingredients: coconut oil, chuck roast, salt, pepper, carrots, parsnips, small round red potatoes, onion, garlic, beef broth, balsamic vinegar, and Italian seasoning. (Parsley was optional...I didn’t have any on hand so I didn’t option it.)
The recipe was easy to follow and cooks all day in a crockpot, very easy. I followed it as stated with the exception of using regular Idaho potatoes rather than little red ones called for as that is what I had on hand. Delicious…Mark loves a pot roast, thought the parsnips were very nice, and the balsamic vinegar gave it all a nice little something extra, my thoughts exactly and this would be most welcome here anytime.
