The 43rd recipe I made for the Cook the Book Fridays group using the Everyday Dorie cookbook by Dorie Greenspan is Bourbon-Roasted Pork Loin, it can be found on page 170.
Ingredients: boneless pork loin roast (with fat cap), bourbon, grainy mustard, honey, brown sugar, Sriracha, salt, pepper, olive oil, onions, and apples. (I threw some carrots into the pot...in this carrot-loving house, carrots come with all roasts.)
We live in a state bordering Kentucky, The Great Bourbon State, which is a mere two hours or so away from us, so it’s a little embarrassing for my Kentucky-based friends to know that I went to the liquor store and purchased two air-lined sized bottles (a dollar each) of bourbon to make this recipe…we are not bourbon drinkers obviously. Other than that, this recipe was a breeze and called for ingredients I always have on hand. It went together quickly even though I did take time to marinate the pork for 8 hours as she suggested, and it cooked fairly quickly so wasn’t at all taxing for weeknight or weekend.
The roast was delicious, the apples were also delicious, the onions sort of just melted away leaving their lovely flavor, and the sauce (the marinade) was really good, all those ingredients loved chatting together flavoring everything up oh-so-nicely. Definitely this will be a repeat…I might even need to buy an actual full bottle of bourbon to have on hand…for cooking, of course.
