The 38th recipe I made for the Cook the Book Fridays group using the Everyday Dorie cookbook by Dorie Greenspan is Sheet-Pan Supper: Balsamic Chicken with Potatoes and Mushrooms, it can be found on page 121.
Ingredients: potatoes, mushrooms, onion, garlic, rosemary, thyme, salt, pepper, olive oil, balsamic vinegar, chicken thighs. (I slipped some Brussels sprouts in there as well as it just didn't seem to have any green and we also served it with some steamed broccoli.)
This was an easy supper to assemble, just an hour to cook, and a quick clean up, perfect for a busy day. The only thing I would change is that we loved the balsamic vinegar mix but felt that it would be better just on the chicken and not also on the veggies. It was all tasty, just a bit one note with the vinegar on everything. Next time the veggies will just have olive oil, salt, and pepper, with some the thyme and rosemary thrown in. The chicken was very moist cooked this way. This is a wonderful recipe that we will repeat again.
