My 171st recipe with the Wednesday with Donna Hay group is All-in-One Crispy Baked Tacos. The recipe can be found in One Pan Perfect by Donna Hay, on page 122.
Ingredients: tortillas, olive oil, cherry tomatoes, red onions, black beans, chipotle in adobo sauce, corn, salt, pepper, avocado, lime zest, lime juice, yogurt, garlic, cilantro (I used parsley).
This recipe is rather like a taco bowl that you order at Mexican restaurants (I know as it is the only thing I order at Mexican restaurants)…baking the tortilla in the oven crisps it and forms it into a nice little bowl shape if you put it in a baking dish just so. There aren’t any new ingredients to me, other than the lime, which I loved…anything citrus is a hit here, so the lime was most welcome. You can easily change up the ingredients to have ones that you enjoy. Definitely a repeat and I’m making that lime sauce from now on.
