My 170th recipe with the Wednesday with Donna Hay group is Roasted Pumpkin and Chorizo Salad with Crispy Chickpeas and Feta. The recipe can be found in One Pan Perfect by Donna Hay, on page 32.
Ingredients: butternut squash, chickpeas, sage, chorizo sausage, sherry vinegar, kale, feta, parsley, lemon wedges, honey, olive oil, smoked paprika, salt, and pepper.
Mark loves sausages of any kind so when I saw this recipe in the book, I knew the sausages, kale, and butternut squash would all be pleasing to him, the chickpeas, not so much. That said, I happen to like chickpeas and the thought of having them roasted sounded like a fine idea…and he could just not include those on his plate, simple solution.
The sausage, squash, and chickpeas are roasted with the marinade and all get a bit of caramelization on them while toasting the oven, which imparts a lovely flavor and when tossed on top of a bed of kale, seems just perfect. I made a half recipe and used luncheon sized plates, even so this amount of roasted tray vegetables would easily make four of these salads as I had enough left over for another round for another day, a happy occurrence because it was all delicious. Definitely a repeat.
