The 40th recipe I made this week for French Fridays with Dorie from Dorie Greenspan's Around My French Table cookbook, is Mushroom and Shallot Quiche, found on page 162.
Ingredients: butter, shallots, mushrooms, thyme, salt, pepper, cream, eggs, scallions, and Gruyère cheese for the tart filling; flour, salt, sugar, butter, egg, and water for the tart crust.
Looking for another recipe for a Friday in Lent (meatless), I came across this one and knew it would be just great as we both love mushrooms. The recipe is simple, easy, and quick, especially if you make the dough for the crust ahead and have it parked in the refrigerator ready to go. It takes the longest bit of time to sauté the mushrooms for the filling, but nothing difficult or too time consuming. I made a third size recipe in a 6” tart pan as that’s about enough for 3 people, meaning the 2 of us and a leftover piece for lunch another day. Absolutely delicious and repeat worthy.
