The 105th recipe I made with the Eating with Ellie group is Hummus with Spiced Ground Beef and Pine Nuts, and can be found in Ellie Krieger's book Whole in One, on pages 167-168.
Ingredients: pine nuts, olive oil, onion, garlic, cumin, coriander, allspice, cinnamon, red pepper flakes, salt, pepper, ground beef, hummus, grape tomatoes, parsley, and olive oil. (For the hummus: garlic, salt, chickpeas, tahini, lemon juice, and olive oil...you can use store-bought if you don’t want to make your own.)
It’s Big Ten Basketball Season here and sometimes it’s nice to just to have a nice light lunch or supper while watching the games, something to share and enjoy while cheering on the Hoosiers. Or the Hawkeyes. This is a Hoo-Hawk kind of house, with the emphasis on the Hoos, of course, but a close second on the Hawks. I digress…this is a great little recipe that is easy, delicious, and fun. It will resurface again during March Madness, I’m sure. Go Hoosiers, Go Hawkeyes!
