The 109th recipe I made with the Eating with Ellie group is Crispy Crushed Potatoes and Roasted Broccoli with Peanut Sauce, and can be found in Ellie Krieger's book Whole in One, on page 59.
Ingredients: potatoes, broccoli, olive oil, salt, peanut butter, lime juice, garlic, cumin, ground coriander, black pepper, red pepper flakes, and scallion.
It’s always good to find some side dishes that aren’t so run-of-the-mill to serve with something fairly common, which this week happened to be a grilled pork chop. Potatoes and Broccoli are always welcome here, so finding a nice little sauce to drizzle over them seemed like a treat. It goes together in just a couple of minutes so it’s waiting to drizzle over the vegetables when they come out of the oven hot and sizzling. The peanut flavor on both the potato and the broccoli is surprisingly really wonderful. Definitely a repeat from time to time.
