Ingredients: spaghetti, olive oil, butter, garlic, balsamic vinegar, cherry tomatoes, and fresh basil leaves.
Last week I made and fell in love with a recipe with these little tomatoes that were cooked. I went in search of another recipe right away to make for this week as they were just such a welcome surprise. This was made on an evening where we just felt like something fairly light without a lot of parts. The sauce made with the olive oil, butter, garlic, and balsamic vinegar was light and very flavorful, I wouldn’t change a thing. She suggested serving it all with a sprinkle of parmesan cheese but we didn’t even bother with that as it was perfect just as it was. Such a simple, easy, delicious weeknight meal…the burst of those little warm tomatoes when they are squashed is pretty much everything, they are so wonderful. Definitely a repeat recipe.
