My 167th recipe with the Wednesday with Donna Hay group is Simple Almond Cakes with Dark Chocolate Espresso Syrup. The recipe can be found in One Pan Perfect by Donna Hay, on pages 248 and 252.
Ingredients: brown sugar, eggs, olive oil, milk, almond flour, baking powder, chocolate, espresso, and cream.
Nancy, my dear friend and baking/cooking/all-things-life cohort, sent me a surprise gift recently of some silicone baking cups as she loves them and thought I would as well. I have seen them around, but just never purchased any, so I was excited to have a chance to try them out. Mark was hoping for a chocolate dessert this week and I saw this recipe in my new Donna Hay cookbook so I figured this would be just the place to give them a workout. One huge advantage of these little baking cups is that you can just use however many you need. As Mark was going to be the only one eating these little cupcakes (you know...chocolate and coffee are not my things), I made a half recipe which gave me 8 little cupcakes, just the right amount as I slid them in on a small baking tray alongside other things I was baking at the time.
The recipe is very easy and quick, as is making the syrup for the drizzle. I had a little taste of the cake and it was moist and delicious with that slightly almondy flavor you get from almond flour, which is very nice, and I’m told goes beautifully with the chocolate topping. As it is so easy just to bake a few little cupcakes along with whatever meal you have in the oven, cool them over dinner, and give them a quick drizzle after dinner, you have dessert ready to go in hardly any time at all. Often the case, Nancy knows what I need/want before I realize it. Thank you, Nancy. Mark loved them. Definitely a repeat.
