Ingredients: ricotta cheese, basil, parmesan cheese, chicken, salt, pepper, olive oil, and cherry tomatoes.
A super easy recipe, only requires one pan, just stuffing cheese and chopped basil into chicken, pan searing it, baking it with some tomatoes thrown in the pan for a brief time, and serving it all with extra basil. The flavor is mild, yet lovely and creamy, and if you love basil as much as we do, it all works perfectly together. You probably don’t even need a recipe for this one, you can probably figure it all out. The little baked tomatoes are warm and they pop in your mouth with the best sort of flavor, those are making an appearance again soon for sure, especially now that the winter selection of cherry tomatoes is such that they don’t have as much flavor as the summer ones, heating them just sends them to a new level. I served it with rice and carrots. All of it definitely on repeat status.
