The 104th recipe I made with the Eating with Ellie group is Honey-Mustard Pork Chops with Sweet-Tart Slaw, and can be found in Ellie Krieger's book Whole in One, on page 195.
Ingredients: pumpkin seeds, red cabbage, onion, carrots, cider vinegar, olive oil, honey, salt, black pepper, Dijon mustard, and pork chops.
This is a sheet pan dinner and therefore, incredibly easy. She calls for 10 ounce pork chops…who eats a 10 ounce pork chop?? So the photo shows one 10 ounce pork chop on the bed of warm slaw and we later split that pork chop and slaw into two plates. The pork chop was very juicy and nicely cooked with the browning that occurred during the broiling minutes. The real star of the show, in my opinion, and Mark quite liked it as well, was that carrot cabbage onion slaw with its dressing…oh my that was so delicious, it gets a little crispy around the edges which is very nice. I will be making this all again soon, Mark loves pork chops and I am definitely craving that cabbage slaw already.
