The 102nd recipe I made with the Eating with Ellie group is Chocolate-Chocolate Chip Sheet Cake, and can be found in Ellie Krieger's book Whole in One, on page 228. (She also has the recipe online at her site click here.)
Ingredients: pastry whole wheat flour, all-purpose flour, sugar, brown sugar, cocoa, baking soda, salt, water, cider vinegar, canola oil, vanilla, chocolate chips, and powdered sugar for sprinkling on top when they are cooled.
Mark was looking for a sweet treat that was decidedly chocolate and that he could top off with some whipped cream. I saw this recipe in the book (all the recipes in the book can be made in one pot, one pan, or one sheet pan) and was intrigued as you make the entire cake in a half sheet pan, no bowls or mixers. I used a half recipe and baked it in a quarter sheet pan. You just add the ingredients into the sheet pan as she says, gently mix it around until it all comes together, clean up the sides a bit, and bake it for 20 minutes. After it cools, you dust it with a little powdered sugar and cut it into portions to serve. In Mark’s case…you dollop a little (or a lot) of whipped cream on the top. Apparently this is just the sort of recipe that satisfies that chocolate dessert urge that comes upon people. I wouldn’t actually know about this but he loved it. While it is not highbrow baking (actually the comparison in mixing it up in the pan could be made to stirring up mud pies when we were children), Mark thought it tasted nice and chocolatey and I thought it was a big bonus that it was fun, easy, and quick to make.
