My 156th recipe with the Wednesday with Donna Hay group is Roast Tomato Soup. The recipe can be found (click here).
The ingredient list: tomatoes, garlic, olive oil, salt, pepper, chicken stock, and a tiny bit of sugar.
I was able to score some vine-ripened end-of-the-season tomatoes from my CSA farmer this past week. They were delicious but they were quickly going to go beyond ripe so I grabbed some to roast and make this tomato soup recipe for lunch, I love tomato soup lunches, they remind me of my childhood where I think I mostly ate tomato soup and grilled cheese sandwiches for every single lunch for years and years and years. Things have changed these days regarding lunch, but I still never turn down an offer for tomato soup and grilled cheese. Tomato soup with roasted tomatoes is a whole new ballgame, I think I will always roast my tomatoes for this from now on. I’m calling it the fall version…a little past summer. Call it what you like, it’s delicious.
