This week we are cooking with pumpkin. It's November after all, officially Cooking with Pumpkin Season here in Indiana. In the Baking with Di group I also belong to, we made Pumpkin Streusel Muffins so I’m presenting these for Pumpkin Week. You can see the recipe here.
The recipe is easy enough, just follow along nicely and do as she says. I made half a recipe as it said it would produce 6 muffins, in fact, it produced 8 muffins with no complaints here, even a full recipe would have been most welcome.
This is a repeat recipe, the flavors were excellent, nicely spiced with cinnamon, ginger, cloves, and nutmeg. The texture was soft and melt-in-your mouth delicious, perfect for these autumnal days.
