The twenty-fifth recipe I made with the Eating with Ellie group is Lemon-Tarragon Chicken with Squash Ribbons, is found on page 141 of Ellie Krieger's cookbook Weeknight Wonders, and was my pick for the group this week.
Ingredient list: flour, salt, pepper, olive oil, chicken breasts, shallots, white wine, chicken broth, lemon, fresh tarragon leaves, zucchini, and summer squash.
If you get all your ingredients prepped and lined up, this recipe goes together in a breeze. All of it is easy to do and none of it takes much time at all making this easy for a weeknight. The taste is fabulous, very French: tarragon, shallot, white wine, chicken...all made for each other. I will make this one often as it is the easiest chicken breast recipe I currently have and tastes wonderfully fresh and moist.
We have a lot of summer squash and zucchini this time of year so the price on those makes it an economical choice for experimenting with new recipes. I really liked the way she instructed us to create the ribbons with them, they took only a minute or two to cook, very quick. The thin ribbons soaked up that lovely sauce...it was all delicious. Fun to learn a new technique with those veggies. Definitely a repeat.
