My 131st recipe with the Wednesday with Donna Hay group is Spinach and Ricotta Pies, was chosen for the group by Chaya, and is found in Donna Hay's book New Food Fast on page 94.
The ingredient list: spinach leaves, ricotta cheese, egg, Parmesan cheese, dill, pepper, and puff pastry.
Puff pastry sheets purchased in the grocery freezer section make things much easier for recipes like this so it's nice that DH embraces that belief as well. The rest of the ingredients just get mixed together and placed in such a way to make a nice little pocket pie reminiscent of Greek spanakopita, the feta and spinach-filled phyllo dough pies. Anything reminiscent of spanakopita is sure to be a hit here, the great taste of spinach and cheese combined with ease of preparation means that it is definitely worthy of a repeat. Soon, it was very good.
