The twenty-third recipe I made with the Eating with Ellie group is Tomato Braised Green Beans, is found on page 245 of Ellie Krieger's cookbook Weeknight Wonders, and was Gaye's pick for the group this week. You can also find the recipe online here.
Ingredient list: onion, garlic, olive oil, green beans, tomatoes, oregano, basil, salt, and pepper.
To be honest, I didn't think I would like this very much, I do love tomatoes and I do love green beans, but I'm not real big on cooked tomatoes touching other things usually so I was a little "iffy" on this going in. Simple to make, surprisingly delicious to eat in the end result. It was really good, as in I will make this again.
It was especially nice since I had green beans, oregano, and basil in my CSA basket so I got to use those in this recipe. I cooked mine a little longer than the stated time in the recipe as my beans were fresh and needed just a bit longer to get them slightly soft but yet with a little bit of crunch in them, which is how we like them.
