Before I begin, I must apologize for the photo...really, there is a chicken breast under all those yummy veggies. Somehow I just didn't stop to think when I dumped all the veggies on top that the chicken, which is supposed to be the star of this recipe, would not be visible. Trust me, it's under there and it looked delicious.
The eleventh recipe I made with the Eating with Ellie group is Asian Chicken and Vegetables in Foil Packets, is found on page 143 of Ellie Krieger's cookbook Weeknight Wonders, and was Margaret's pick for the group this week.
Ingredient list: scallions, red bell pepper, yellow bell pepper, carrot, chicken breasts, soy sauce, rice vinegar, dark brown sugar, sriracha, and toasted sesame seeds.
Another great chicken breast recipe (I'm sure it would be good with chicken thighs as well). The flavors are subtle so if you aren't a huge Asian spice/flavoring fan (this would be Mark), you can enjoy this dish, and if you are a huge Asian spice/flavoring fan (this would be me), you can really enjoy this dish for it's flavors and calorie-friendly aspects. The recipe stated that you could assemble the foil packets up to 12 hours in advance, so I took advantage of that deal, assembled them all early in the morning and just had to pop them in the oven at dinner time. I love doing foil packets for this reason and also that the ingredients stay moist and nice inside.
The only thing I changed was that I found that in my oven, for the size of breast I had (cutting a full large breast in half lengthwise to create the two pieces for us), it took 20 minutes to fully cook the chicken to temperature. This recipe is definitely worth repeating.
