The recipe for this week forTuesdays with Dorie: Baking with Julia is Whole Wheat Loaves on page 83 of Baking with Julia. Ingredient list: active dry yeast, water, honey, bread flour, whole wheat flour, canola oil, malt extract, and salt.
The recipe goes together very
nicely and the dough is wonderful to work with throughout the whole
process. I did it all by hand, my usual style. The second rise took
half again as long as indicated, and I still felt that I could have had a
bit more rise to it, but it was fine.
The texture is very dense with a
tight crumb which was nice and chewy. The flavor isn't strongly whole
wheat as there is so much bread flour in it and the malt extract and
honey are both nice flavoring ingredients that have a strong presence in
the flavor profile, so the taste was a little sweet and nutty. All in
all, a good recipe, makes great toast.
