The recipe for this week for French Fridays with Dorie from Dorie Greenspan's Around My French Table cookbook, is Endives, Apples, and Grapes, found on pages 338-339. You can also find the recipe on Dorie's blog, here.
Ingredient list: endives, apple, butter, grapes, rosemary, salt, and pepper.
More
new things to do with vegetables and fruits, what a deal! Pan roasting
all these ingredients intensified their flavors and caramelized their
sugars, giving them whole new flavor profiles, especially the endive
which is rather bitter on its own. I love roasted apples and grapes, so
I figured this dish would be a hit, and it was.

The rosemary was nice...I think I will give sage a go next time just for fun to see how that does with these ingredients. Definitely a repeat, not much trouble, lots of flavor, and with just the tiny amount of butter, healthy for the most part.
