This
week for CEiMB, I made Herbed Chicken Salad (on page 169) from Ellie
Krieger's book, Comfort Food Fix. I never get tired of trying new
chicken salad recipes. It's one of my favorite lunches at home and
packs up just as easily for carting to work.
The ingredient list: chicken breast, lemon, salt, pepper, celery, Greek yogurt, mayonnaise, fresh chives, and fresh tarragon.
The recipe replaces half of the mayo with a half measure of Greek yogurt which lends a lovely tang to the dressing, lightening it up in taste and calories. I have ample herbs growing this time of year, chives and tarragon being in that lineup, so the addition of those was key to making it have a different taste to what I am used to, the tarragon being a little bit like licorice but not quite, if you know what I mean. It was wonderful with the chicken and dressing. Definitely making this one again.
