This
week for CEiMB, I made BLT with Avocado Spread (on page 125) from Ellie
Krieger's book, Comfort Food Fix. I will also apologize for this
less-than-wonderful photo of it all, believe me, BLT sandwiches are not
that easy to photograph, if you do better, send me your tips for trying
to show the inside ingredients without the outside falling apart into a
big mess, I will be eager to hear them.
The ingredient list: avocado, lemon juice, salt, pepper, bacon, bread, romaine, and tomatoes.
This is just your basic Bacon Lettuce Tomato Sandwich with a slight twist: the avocado spread used in place of mayonnaise. Of course, Ellie also recommends using whole wheat bread (sorry, the day I made this we had just one Hearty Pepperidge Farm sandwich white loaf in the house) and just 2 slices of nitrate-free bacon for a healthier version.
It was a big plus a few years back to learn that avocados were "good" for you, that the fat in them was the "good" fat, etc. because this is an avocado-loving household. Substituting the good-for-you avocado spread for the not-so-good-for-you mayonnaise seemed liked a fine idea. The spread is easy to make, just mix the avocado, lemon juice, salt, and pepper together and use it as a spread for your sandwich. One avocado for 4 sandwiches.
I am pretty sure I am never going back to mayo on my BLT again...from this day forward: Ellie's Avocado Spread will be my weapon of choice. It's that good. Go make one: it's the perfect time of year for it, the tomatoes are glorious.
