This week for CEiMB, I made Apple and Spinach-Stuffed Pork Chops with Mustard Wine Sauce (on page 157) from Ellie Krieger's book, Comfort Food Fix.
The ingredient list: onion, apple, garlic, spinach, sauerkraut, pork chops, salt, pepper, flour, turmeric, caraway, Dijon, white wine, and chicken broth.
This was delicious, easy to prepare, full of flavor, and that sauce alone is worth the price of the book. I have made the sauce to use on flank steak, chicken, fish, and the pork chops. A win every single time. This entire recipe is packed with flavor and excellent. Definitely a repeat, I'm not a big pork chop lover, but Mark is, and I have to say, I really did like these very much. (This was a really large pork chop and served 2 people.)
