Love, love, loved this recipe. It's very simple, no fancy ingredients, and takes hardly any time at all...roasting the tomatoes being the thing that took the longest, which was the time I used for assembling the ingredients, plate, etc. for the rest of it.
I not only would make this again, I have made it a couple of times since the original time. I have also used the roasted tomatoes to top a spinach salad and that was wonderful as well. The tomatoes are roasted with olive oil, balsamic vinegar, brown sugar, and black pepper. Oh, my goodness this is a wonderful combination. Definitely a recipe that is going to see more than occasional action around here.
