This week for CEiMB, I made Roasted Pork Loin with Parsley-Shallot Sauce (on page 198) and Honey-Roasted Sweet Potatoes on page 268 from Ellie Krieger's book, The Food You Crave. (You can also click on the recipes to find them online.)
The ingredient list for the Pork Loin: garlic, salt, olive oil, sage, rosemary, thyme, pepper, and pork loin. The ingredient list for the Parsley-Shallot Sauce: parsley, shallot, Dijon mustard, olive oil, lemon juice, water, salt, and pepper. The ingredient list for the Sweet Potatoes: olive oil, honey, lemon juice, salt, sweet potatoes.
Both recipes were delicious and easy enough for a week night. The sauce looks shockingly green but it compliments the pork so nicely. I will definitely make that sauce again, it would be nice with chicken as well. Definitely a repeat as Mark loves pork loin and this was a good recipe for it, the sauce was just wonderful. Oh, I already said that, didn't I?
