The 75th recipe I made from The Modern Baker by Nick Malgieri, was the one for Three-Way Gingersnaps, on page 279. (We are not publishing recipes from the book, so if you like what you see, buy the book and bake along with or without us).
The ingredient list: all-purpose flour, baking soda, salt, ground ginger, unsalted butter, sugar, egg, fresh ginger, crystallized ginger, and honey.
Oh my goodness these are addicting. They have the nicest spice kick to them, better than any other gingersnap cookie I have ever had...it must be all that ginger in the three forms. From now on all other gingersnaps will pale in comparison. They are that good.
I baked mine for the 20 minutes rather than the 15-20 as stated in the recipe because we like a nice crunchy cookie. They were perfect for us. I also made two batches, one with my Modern Baker Twitter pals online, and one again after that because one batch was not enough, they disappeared quickly over the holidays. Definitely a repeat, easy and excellent in taste.
