This week for CEiMB, the group made Spicy Chicken Fried Rice with Peanuts from Ellie Krieger's new book, Comfort Food Fix, on pages 174-175. (You can also find the recipe on Chaya's blog, here, as this was her choice for the group this month.)
The ingredient list: soy sauce, brown sugar, toasted sesame oil, red chili flakes, canola oil, onion, scallions, red bell peppers, garlic, fresh ginger, water chestnuts, cooked chicken, cooked brown rice, and chopped unsalted peanuts.
This was a lovely lunch, nice and light without a lot of heavy oils or any greasy feeling left on your tongue (as is often the case with recipes such as this). It has a real nice hot kick to it with the red pepper flakes and sesame oil. Very nice. I did leave the water chestnuts out as we don't care for those, but other than that, the recipe was made as written and worked wonderfully well. Recipes like this are nice as you can mix them up as far as the veggies you have on hand, etc. Shrimp would be nice in place of chicken as well. Definitely a repeat.
