This week for CEiMB, I chose to make the Portobello Lasagna Rollups with Easy Tomato Sauce on pages 152-153 of Ellie Krieger's book, The Food You Crave. You can find the recipes online here.
These were fun to make and they look so cute all done up in their little packages. This would be a great recipe to make ahead, park in the frig, and then bake in the oven when guests were coming for dinner, or on a busy weeknight. The portions are large, the book states that each person would get 2 rolls but that is way too much if you are serving a salad and maybe some garlic breadsticks with it, one of the rolls is plenty. Next time I will adjust the recipe accordingly to figure the portions.
The mushrooms were wonderful and one doesn't miss the meat at all. That said, if meat was desired, you could use a meat sauce rather than just a tomato sauce. Rather than stand the rolls on end, which was really pretty in the photo in the book, I positioned them on their sides so that they would fit in my baking dish better. Definitely a repeat.
