The fortieth Bread Baker's Apprentice challenge (from the book by the same name authored by Peter Reinhart) is White Bread (Variation 1), and is found on pages 265-267. I made the full recipe of this bread, 2 loaves, one to put into the freezer and one to have on hand.
The ingredients: bread flour, sugar, powdered milk, salt, instant yeast, egg, butter, and water.
This is a one-day bread. Margaret and I are continuing on in our attempts to finish the book in a more timely manner, i.e. we are making definite progress. Di joined in with us for this bread, her post is here. This bread is delicious for eating out of hand, using for sandwiches, toasting, and grilled cheese. It has a nice flavor to it, the dough is lovely to work with, etc., however, I felt it was just a little lacking as compared to Dan Lepard's Milk Loaf which is hands down our favorite eating, toasting, grilled cheesing bread.
I would not hesitate to make this BBA recipe again, but if I am truthful, I probably won't because the DL Milk Loaf is just that much better in taste for my family. The only way you will know is if you make them both and have a side by side taste test to decide for yourself. Either way, you are in for some lovely bread with each of the recipes.
You can visit the main group and marvel the breads. I'm getting there...Slow and Steady. Our next challenge: White Bread, Variation 2, found on pages 265-268.
