My husband is a big fan of pumpkin pie, so I knew I would get around to making this recipe at some point this week, let's see, it was due on Tuesday and I finally found time on Saturday.
I made a small 6" tart size, which took a fourth of the dough recipe and a scant fourth of the filling recipe as well. Mark was very happy with it, I had a small bit and it was nicely spiced, and you could also definitely taste the rum in the mix, a nice little punch of extra flavor. Definitely a repeat, I still have pumpkin left over, and I still have more tart crust to use, so this may be happening again here before mid-week. Thanks, Judy...a big hit with the pumpkin eater here.
