This recipe represented another chance to practice my mediocre biscuit-making skills. I'm not sure how well I did, but my husband loved them, eating five of them with bacon and eggs as breakfast sandwiches...don't panic, the little biscuits are just 2" in size, the total count of eggs was 2 and I used 2 pieces of bacon, so the totals on all that, while adding up, seem a little more discreet than saying Mark ate 5 breakfast sandwiches. I think.
Anyway, these were light an fluffy inside and crunchy on the outside, and tasted delicious with a swipe of butter and a little honey drizzled on them as well. I know. I ate two. And I'm not a biscuit person, so I guess we can say these are repeat worthy every now and again as they are easy, quick, and delicious...what's not to like about all that?
