This week for CEiMB, I chose to make the Sirloin Steak with Grainy Mustard Sauce and Parmesan Steak Fries on pages 169-170 of Ellie Krieger's book, So Easy. You can find both of the recipes online here.
Ingredient list for steak: steak, shallots, flour, canola oil, chicken broth, salt, pepper, whole-grain mustard. The ingredient list for the fries: potatoes, canola oil, grated Parmesan cheese, and salt.
Easy enough, steak and fries. The fries were quick and baked in the oven and not fried in oil...they were nice and crispy on the outside and tender on the inside, which is how we like them.
The steak is really just how you like it and then you drizzle on the mustard sauce which is really good. Really good. It's made with chicken broth, mustard, and a little flour to thicken it up. Did I say that this was really good on steak? This is really good on steak. I can think of several other things this would be good on as well...chicken, pork, fish, vegetables...I am thinking this is a new "go to" sauce recipe, you know, the kind that you print off and tape to the inside of your kitchen cabinet because that way you don't have to go looking for the book when you want to make it often. I'll have this one memorized soon, no doubt, mustard-loving family that we are and all.
