This week for CEiMB, I chose to make the Savory Peach Chicken on page 143 of Ellie Krieger's book, So Easy. You can find the recipe online here.
Ingredient list: orange juice, brown sugar, soy sauce, rice vinegar, canola oil, boneless skinless chicken breasts, salt, pepper, ginger, garlic, chicken broth, peaches, brown rice, almonds, and broccoli spears (I subbed in asparagus as that is what we had on hand at the time).
This dish has a definite Chinese-type flavor profile, combined with the fruit, made it a nice change of pace around here as we rarely make things like this. It came together quickly, so is perfect for a weeknight dinner. The soy sauce, rice, and asparagus tamed the sweetness of the peaches/orange juice/brown sugar combination nicely. Definitely worth making again sometime when we are in a chicken-rice-asparagus-Chinese kind of mood.
