Thanks to Tia, from Buttercream Barbie, for her pick of Salt & Pepper Cocoa Shortbread, found on page 128 of Dorie Greenspan's Baking from My Home to Yours cookbook. Click here for the recipe. One can never have too many cookie recipes, Tia, so thanks for this week's pick.
These cookies were fast and easy to pull together. After you mix it all up, it sits in the frig for a few hours while you run errands, read, or watch a movie...yep, you don't even have to hire a babysitter to watch over it. After you slice and bake them for 15 minutes, they are ready to be devoured. At least that was the story here...I'm not sure there are cookies that Mark does not like, but these disappeared in very little time, a good indication that they are worthy of repeating.
He did say that the salt and pepper were not the predominant flavors, the chocolate carried more of the flavoring, but that he could taste the salt and it was pleasant and that the pepper left a little lingering taste in the back of his mouth which was rather nice. Good or bad, you decide.
