These cookies could not be easier, you throw a few ingredients together in a food processor, roll into a log on plastic wrap for a four-hour stint in the refrigerator, slice, bake, and cool. They are, just as the recipe says, quickies, although you do have to take into consideration the time the dough rests in the refrigerator before you bake them off, so you can't make them and eat them in the same hour.
The cookies make a nice addition to packing in Mark's lunch and, of course, his favorite way of eating cookies: grab a few on the way out the door in the morning and call it breakfast. Could definitely be a repeat.
